Stir Fry Chicken and Broccoli

This is one of my go to dinners that I make when I dont want to come up of something to make. I always have all the ingredients on hand.

Here are the ingredients:

2-3 chicken breats thawed. I buy the kirkland individually wrapped ones and stick them out to thaw. I do one chicken per person eating and I usually have leftovers.

2-3 Tablespoons of  finally chopped garlic cloves.

about 2-3 Teaspoons ground ginger. (I do about as many teaspoons as pieces of chicken)

1 cup of chicken broth. I alway have chicken bullion on hand so instead of broth I do 1 cup water and 2 cubes of bullion.

3 Tablespoons of soy sauce

2 teaspoons of sugar

broccoli: as much or little as you would like. I like a lot. Do note that if you use frozen broccoli like I do it does shrink down quite a bit. So dont be intimidated by  putting a lot in it.

DIRECTIONS:

Take your thawed chicken and cut in into bite sized pieces.

Start cooking rice (optional) I use uncle bens rice, its my favorite.

Spray non stick spray or some olive oil in a frying pan on medium heat. Add the chicken, garlic, and ginger. Fry that until the chicken is brown. (I was only making 1 chicken, but still used the same amount of seasoning.)

Add about 3/4 of the broth, soy sauce and sugar. Cover and cook for about 5 mins stirring a couple times.

Add the broccoli then cover and cook until chicken is fully cooked and broccoli is done.

While that is finishing cooking mix the other 1/4 of broth with flour and add to pan. Stir until the sauce is thickened.

When you like the thickness of  the sauce, your ready to plate. I add mine directly onto rice.
